Alberto Rocchi. A man of few words, as “dry” as his figure, direct, rough and essential as his dishes: without frills and “neat”, with precise and perfectly balanced flavors as in his risotto.
Yes, because Alberto is the “father” of the Gavi Risotto.
He comes from Romagna, a vocation for bartendering, cook for need.
Alberto arrived to Gavi more than forty years ago and encountered the universe of cookery thanks to his mother Tebe. It is today difficult for him to separate from that kitchen even though about ten years ago he officially passed helm to his two daughters Roberta and Elisa.
“I want the best for my clients but especially for me, I could never serve something in which I don’t believe.” “We purchase ingredients only from the best producers of the territory and we always follow the seasons: this has created a unique relationship with our customers, a faith bond that lasts in the years.”
THE FAMILY
It’s now more than ten years that Roberta and Elisa wisely preserve their father’s tradition. This knowledge is now also handed down to Pietro and Tommaso.
The gastronomic creations are drawn from that “boundry” cookery tradition which is typical of the conjunction between two regions: Piedmont and Liguria.
In the respect of this tradition, there is the continuous desire to improve through research and innovation, always paying the same attention to the quality of the products of our territory. Not just chefs, but artisans of taste.
COOKERY
Each dish has its time at Cantine del Gavi. The main elements of our courses are experience, tradition and fresh ingredients from Gavi’s territory.
We love to follow carefully the seasonal cycle in order to prepare each specialty with exclusively the products the earth offers in that precise period.
This is how eating really becomes an unforgivable experience.
WINE CELLAR
Cantine del Gavi Restaurant is located in a beautiful XVIII century palace, which was probably owned in the by a rich merchant.
His business trips are in fact recounted in the frescoes that decorate the beautiful vaults of the room where a small altar can still be seen, a symbol of the family’s devotion.
The wine cellar, carved in the mighty walls of the building, extends over the entire surface of the restaurant. Many objects, collected over time, enrich every single corner of the underground route representing the will and the importance of passing on ancient knowledge.
Since 1970, in fact, Rocchi Alberto collects the most important bottles of wine, such as Monfortino verticals from 1941 till today, and the best vintages of Barbaresco Gaja. Today Luca Maria Ivaldi takes care of selection and research, paying attention to the labels.
In the cellar there are currently more than 1000 labels, ranging from northern to southern Italy with a particular attention to the greatest Piedmont wines.
